Ingredients:

  • 6 oz pink oyster mushrooms
  • 2 cups fresh spinach, washed and chopped
  • Salt and black pepper, to taste
  • 1 cup all-purpose flour, for coating
  • 4 tablespoons olive oil
  • 3/4 cup Marsala wine
  • 1 cup vegetable broth
  • 2 tablespoons unsalted butter
  • 8 oz spaghetti, cooked as per package instructions

Instructions:

  1. Get Your Mushrooms and Spinach Ready:
    • Season the pink oyster mushrooms with salt and pepper.
    • Wash and chop up the fresh spinach.
  2. Coat the Mushrooms:
    • Give each pink oyster mushroom a light coating of flour.
  3. Cook Mushrooms and Spinach:
    • Heat 2 tablespoons of olive oil in a big pan.
    • Add the mushrooms and cook until they’re golden and tender (around 3-4 minutes).
    • Toss in the chopped spinach and cook until it wilts.
    • Take the mushrooms and spinach out of the pan and set them aside.
  4. Make the Marsala Sauce:
    • Pour the Marsala wine into the pan, scraping up any tasty bits at the bottom.
    • Let the wine reduce by half (about 3 minutes).
    • Add the vegetable broth and simmer for 5 more minutes.
