Instructions:
Don’t remove the lid just yet!
Let it Colonize: Store the container at room temperature in indirect light. Watch while the active mycelium completely colonizes the substrate. In a few days pins (small stem-like tendrils) will form.
Remove Lid: Pop that top off and let them breath. Mushrooms need a lot of fresh air to grow. Hold onto the lid for later. We’re about a week from harvesting now.
Keep Moist: Spray with water 3-4 times a day. Just enough to keep them a little wet without soaking.
Harvest: Mushrooms are ready to harvest when the tips of their caps start curling up. Harvest the entire canopy at once by pulling the stems at the base. Cut off each cap where the gills meet the stem for maximum tenderness. No need to rinse.
Cook: Each flush is a star ingredient in your favorite recipe or you can just sear them up with some butter and seasoning. Be sure to cook them thoroughly. I like them a little crispy.
Second Flush: More mushrooms are coming! Fill the container with water for 12-24 hours. Pour out the water then mist the surface really well and put the lid back on. They’ll take a bit longer this time, once you see more pins remove the lid and keep the surface hydrated.
Note: Spores are super cool but you don’t want them on your countertop. If the mushrooms become too mature (a day after the caps start curling up) they’ll begin dropping them. If you see a light dust underneath the mushrooms then it’s definitely time to harvest. Cook them directly or store them in the fridge for a few days in a paper or plastic bag.
