Ingredients:
- 6 oz pink oyster mushrooms
- 2 cups fresh spinach, washed and chopped
- Salt and black pepper, to taste
- 1 cup all-purpose flour, for coating
- 4 tablespoons olive oil
- 3/4 cup Marsala wine
- 1 cup vegetable broth
- 2 tablespoons unsalted butter
- 8 oz spaghetti, cooked as per package instructions
Instructions:
- Get Your Mushrooms and Spinach Ready:
- Season the pink oyster mushrooms with salt and pepper.
- Wash and chop up the fresh spinach.
- Coat the Mushrooms:
- Give each pink oyster mushroom a light coating of flour.
- Cook Mushrooms and Spinach:
- Heat 2 tablespoons of olive oil in a big pan.
- Add the mushrooms and cook until they’re golden and tender (around 3-4 minutes).
- Toss in the chopped spinach and cook until it wilts.
- Take the mushrooms and spinach out of the pan and set them aside.
- Make the Marsala Sauce:
- Pour the Marsala wine into the pan, scraping up any tasty bits at the bottom.
- Let the wine reduce by half (about 3 minutes).
- Add the vegetable broth and simmer for 5 more minutes.
